Tracking changes across datasets

I receive data in the form of .csv files and link these as data tables for further analysis. I'd like to track changes from one dataset to the next to see rows that have been added in the newest file, rows that dropped, and what attributes may have changed for a given row.

Right now, I'm just replacing the data tables with the new .csv that I receive, so I lose records from the old data table.

What would be the best way to structure this to track changes from one .csv to the next
