What would be the formula to add the values of column A per day, and when this does not have a value that adds those of column B?.

If this for a calculated column, or something else?

Assuming that the missing values are null values, here's a very basic example of using the value from one column if it's not null, otherwise using the value from a different column.

If([A] is not null,[A],)
