I've never worked with OData before, but we have a new vendor where some of our data can be accessed through an OData connection. Could you maybe give an overview of what OData is and what are the best ways to get it set up and brought in for my engineers to begin viewing and analyzing data from an OData source?

In Spotfire, to connect you can use the OData Connector without installing any additional software on your computer.

You can find lots of iron python tutorials on the internet. They are generic of nature.
If you want to combine it with Spotfire, this is a good way to start: https://www.sf-ref.com/introduction/. I believe that some of the tutorials and the reference guide will get you up to speed, so you can better understand/read the snippets that we have available here.
